Dialy Report ( inggris Version )


Come back and hello again guys yesterday i not publish my daily report because yesterday i permission not join in kitchen today february 27th 2018 is day two three week signed in kitchen hehehe ... okay  practical today is prepare and doing for open resto at 12.00 o'clock as usual we one line at 8.00am and incharge by semester four. while we one line senior come give referrals for all before doing.

After listening refferals by senior we 
respectively of section and i join to group two (2) , group two get section make a shrimp bisque how to make shrimp bisque

- Okay the first prepare all ingredients and utensils

   

-After that make a shrimp stock
-After make a shrimp stock make the veloute sauce composed by:
  -White roux Composed by :
Flour,melted butter
-Fish Stock


 

-After that prepare again for feeling for shrimp bisque composed by:
-Onion , Carrot Chop to small dice 
-Shrimp , Cooking cream , Thyme , Butter , Bay leaf , Salt and pepper , Tomato paste
-After prepare put stock pot into stove and heat that


-After that at butter until melted

  

After butter melted input onion saute that until fragrant
-Until onion fragrant input the carrot saute again until fragrant

-After that input thyme , bayleaf and saute that until fragrant
-After that at a shrimp stock heat that until boil
-Until boil input veloute sauce in stock pot and stir that until boil
-Until boil again input the shrimp and simmer that until the carrot and onion down cook
